Discipline

I captured these photographs as part of the interview with Chef Andrea Berton, which was published in 2019 on The Creative Brothers.

“I live with the need for rigor and discipline as a norm since my superiors were strict with me. It wasn't the reprimand itself that bothered me when I made mistakes, but the fact that I hadn't fully understood what needed to be done and that I hadn't committed enough. I try to explain to all my collaborators that this is the right mindset: it requires self-criticism, a predisposition that few possess. If you are confident in what you do and how you do it, then you can accept criticism that, upon reflection, can be constructive. It's about finding an inner balance so that criticism can slide off the surface, yet be internalized. That's where the difference lies”.
